Meatloaf
Dinner tonight was Meatloaf, one of my favorites. This recipe is moist with a wonderful flavor. You'll want to make a large loaf so there is plenty for sandwiches the next day.
1/2 lb ground sirloin
1/2 lb ground beef
1/4 lb ground pork
1/4 lb ground veal
2 eggs
2 tablespoon worcestershire sauce
1 package onion soup mix
Italian bread crumb
3 slices bacon
1 large can Italian crushed tomatoes
salt
ground pepper
oven 350 degrees
In a large bowl combine meat, eggs, worcestershire sauce, and soup mix, slowly add breadcrumb to mixture, you will feel the moisture leaving the mixture, not to much breadcrumb you don't want it to be heavy and dry, salt and pepper.Transfer to a glass backing dish and form into a loaf. Lay bacon stripes on top and bath in crushed tomatoes.
Bake 45 min covered, 15 min uncovered
