Lima Beans and Tomatoes
This is a great side dish, tonight I'm serving it with a Pork Tenderloin encrusted with fresh herbs, the recipe is from my mother...........

! small bag dry Lima beans
1 medium onion
1 28 oz can plum tomatoes with basil
coarse salt
fresh ground pepper
fresh basil
1 small package salt pork
wash beans and cover with water in medium soup pan, add rough copped onion, salt pork,and bring to a boil on high heat, turn heat down to slow simmer, cook until just tender.
add tomatoes cutting into quarters with about half the juice, bring back to a boil on high heat, turn heat down to a low simmer and cook until done.
remove from pan with a slotted spoon onto a serving dish, season with salt,and pepper to taste, garnish top with chopped fresh basil..........
